Frito Pie Mac and Cheese
1-9 ¼ oz bag Fritos
1-15 oz can chili (or your own chili – a great use for leftovers)
1-15 oz can black beans, rinsed and drained
½ c shredded Mexican blend cheese
Preheat oven to 350 degrees. In deep pie plate spread layer of Fritos, reserving some for top. Stir chili into the beans to mix well then pour into pie plate. Bake at 350 degrees for 25-30 minutes or until heated through. Sprinkle cheese and remaining Fritos on top. Serve with a wide spatula.
Grandma Irene’s Baked Rice
1 c raw rice, cooked in 2 c water
3 eggs, slightly beaten
¾ c sugar
½ t salt
1 t vanilla
1 c whole milk
1 c cream
1 c raisins
Mix all together and put in an 8” x 11 ½” pan and bake at 350 degrees for 35 minutes. Optional: Sprinkle cinnamon on top.
Aunt Proxie’s Potato Soup
2 carrots
3 large potatoes
1 onion
Cut carrots thin or grate – chop some onions and slice potatoes. Bring to a boil till tender. Add 1 quart milk and ½ pint half and half. Let come to boiling point. I add dumplings to mine. (There is, of course, no recipe for the dumplings!)
Tater Tot Hotdish
1 1/2 lb ground beef, browned with onion, salt and pepper
1-10 ¾ oz can cream of mushroom soup (or cream of celery or cream of potato)
1-14 ½ oz can cut green beans, drained
1-32 oz pkg Tater Tots
Preheat oven to 350 degrees. In a 9” x 13” baking dish, spread the meat and top with green beans. Spread with layer of soup. Top with Tater Tots, arranged in neat rows. Bake for one hour.
Mac and Cheese
Notes: For a heartier, richer sauce, substitute evaporated milk for some of the milk. Also, eggs can be substituted for flour to make a more custard-like dish.
